This easy one-pot Cajun sausage penne pasta is a creamy, flavorful weeknight dinner made with cajun sausage, penne, and a simple sauce the whole family will love. Ready in 30 minutes!

2cupsuncooked penne pasta
1tbspolive oil
1mediumonionchopped (approx. 1.5 cups)
2clovesgarlicminced
1 (14 oz)candiced tomatoesdrained
1cupheavy creamor coconut cream for dairy-free
1cupchicken broth
1tspsmoked paprika
1/2tspcayenne pepperoptional
Salt and pepper to taste
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook for 5 to 7 minutes, until heated up and slightly browned. Remove from the pot and set aside.
Add the chopped onion to the same pot and cook until soft, about 3 to 4 minutes. Stir in the garlic and cook for 1 minute.
Add the uncooked penne, drained tomatoes, heavy cream, and chicken broth to the pot. Stir to combine.
Season with smoked paprika, cayenne pepper (if using), and a pinch of salt and pepper.Bring to a boil, then reduce heat to a simmer. Cover and cook for 12 to 15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
Return the sausage to the pot and stir everything together. Let it simmer uncovered for 2 to 3 more minutes, until heated through and creamy.
Taste and adjust seasonings. Serve hot, topped with chopped parsley and Parmesan if desired.
