Ingredients
  

  • 1 package Aidell's Cajun Style Sausage, sliced or other cooked Cajun-style sausage like Hillshire Farms, etc
  • 2 cups uncooked penne pasta
  • 1 tbsp olive oil
  • 1 medium onion chopped (approx. 1.5 cups)
  • 2 cloves garlic minced
  • 1 (14 oz) can diced tomatoes drained
  • 1 cup heavy cream or coconut cream for dairy-free
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper optional
  • Salt and pepper to taste

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook for 5 to 7 minutes, until heated up and slightly browned. Remove from the pot and set aside.
  • Add the chopped onion to the same pot and cook until soft, about 3 to 4 minutes. Stir in the garlic and cook for 1 minute.
  • Add the uncooked penne, drained tomatoes, heavy cream, and chicken broth to the pot. Stir to combine.
  • Season with smoked paprika, cayenne pepper (if using), and a pinch of salt and pepper.Bring to a boil, then reduce heat to a simmer. Cover and cook for 12 to 15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  • Return the sausage to the pot and stir everything together. Let it simmer uncovered for 2 to 3 more minutes, until heated through and creamy.
  • Taste and adjust seasonings. Serve hot, topped with chopped parsley and Parmesan if desired.
