leftover pulled pork or rotisserie chicken
shredded

sweet potatoes
peeled and diced

butter

onion
diced

bell pepper

BBQ sauce
plus more for drizzling

smoked paprika
salt and pepper
to taste
Instructions
Heat olive oil or butter in a large skillet over medium heat.
Add diced sweet potatoes and cook for 8-10 minutes until they start to soften, stirring occasionally.
Toss in the diced onion and bell pepper. Cook for another 5 minutes until vegetables are tender.
Stir in the leftover pulled pork or chicken, BBQ sauce, smoked paprika, salt, and pepper. Cook until heated through (about 3-5 minutes).
Drizzle with extra BBQ sauce. Serve hot.
Notes
You can sub out the bell peppers for zucchini, or your favorite vegetable.
