BBQ Leftover Pulled Pork or Chicken Sweet Potato Hash

Ingredients
  

  • 2 cups leftover pulled pork or rotisserie chicken shredded
  • 2 large sweet potatoes peeled and diced
  • 2 tbsps butter
  • ½ cup onion diced
  • 1 bell pepper diced
  • cup BBQ sauce plus more for drizzling
  • 1 tsp smoked paprika
  • salt and pepper to taste

Instructions
 

  • Heat olive oil or butter in a large skillet over medium heat.
  • Add diced sweet potatoes and cook for 8-10 minutes until they start to soften, stirring occasionally.
  • Toss in the diced onion and bell pepper. Cook for another 5 minutes until vegetables are tender.
  • Stir in the leftover pulled pork or chicken, BBQ sauce, smoked paprika, salt, and pepper. Cook until heated through (about 3-5 minutes).
  • Drizzle with extra BBQ sauce. Serve hot.

Notes

You can sub out the bell peppers for zucchini, or your favorite vegetable.
