BBQ Leftover Pulled Pork or Chicken with Sweet Potato Hash

BBQ Pulled Pork or Chicken Sweet Potato Hash

A savory and sweet one-pan dish that comes together in under 30 minutes. And, you can use one skillet for the whole dish, making a lot less to clean up later!

Ingredients (Serves 4):

• 2 cups BBQ leftover pulled pork or shredded rotisserie chicken

• 2 large sweet potatoes, peeled and diced (about 3 cups)

• 1 tablespoon butter

• ½ cup diced onion

• 1 bell pepper, diced

• ⅓ cup BBQ sauce (plus more for drizzling)

• 1 teaspoon smoked paprika

• Salt and pepper to taste

Instructions:

1. Heat butter in a large skillet over medium heat.

2. Add diced sweet potatoes and cook for 8-10 minutes until they start to soften, stirring occasionally.

3. Toss in the diced onion and bell pepper. Cook for another 5 minutes until vegetables are tender.

4. Stir in the leftover pulled pork or chicken, BBQ sauce, smoked paprika, salt, and pepper. Cook until heated through (about 3-5 minutes).

5. Drizzle with extra BBQ sauce. Serve hot.
