Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil or butter
  • 1 medium onion diced (optional, or use half for fewer carbs)
  • 3 cloves garlic minced
  • 4 cups beef bone broth or beef broth if that's what you have on hand
  • 1 8 oz black cream cheese softened and cubed
  • 1 10 oz can diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp chili powder optional, for spice
  • Salt and pepper to taste
  • 2 cups fresh spinach optional, omit for lower carbs

Instructions
 

  • Cook the beef – In a large soup pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  • Sauté onion & garlic – Add onion (if using) and garlic, cooking for 2–3 minutes until softened.
  • Add broth & seasonings – Pour in beef bone broth (or regular beef broth), diced tomatoes, smoked paprika, oregano, and chili powder. Stir and bring to a simmer.
  • Stir in cream cheese – Lower the heat. Add cubed cream cheese, stirring until melted into the soup.
  • Make it creamy – Add heavy cream and spinach/kale. Simmer for 5–10 minutes so the soup thickens and flavors come together.
  • Serve – Taste and season with salt and pepper. Serve hot with shredded cheddar or fresh herbs if desired.
