- Cream cheese

How to Make Creamy Beef Soup

Step 1. Cook the beef – In a large soup pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
Step 2. Sauté onion & garlic – Add onion (if using) and garlic, cooking for 2–3 minutes until softened.
Step 3. Add broth & seasonings – Pour in beef bone broth (or regular beef broth), diced tomatoes, smoked paprika, oregano, and chili powder. Stir and bring to a simmer.
Step 4. Stir in cream cheese – Lower the heat. Add cubed cream cheese, stirring until melted into the soup.
Step 5. Make it creamy – Add heavy cream and spinach/kale. Simmer for 5–10 minutes so the soup thickens and flavors come together.
Step 6. Serve – Taste and season with salt and pepper. Serve hot with shredded cheddar, sour cream or fresh herbs if desired.

Recipe Tips & Variations
- Spicy kick – Add jalapeños or extra chili powder for a little heat.
- Extra cheesy – Stir in shredded cheddar along with the cream cheese.
- Dairy-free keto option – Use coconut cream and a dairy-free cream cheese substitute.
- Low-carb vegetables – Mushrooms, zucchini, or cauliflower rice can be added without bumping up carbs too much.
- Boost nutrition – Stick with bone broth when possible—it’s richer in protein, collagen, and minerals than regular broth.

Why This Keto Soup Works
This Keto Creamy Beef Soup hits all the right notes: it’s hearty enough to feel like a full meal, quick enough for a weeknight, and flexible enough to make with whatever low-carb veggies you have on hand.
Using bone broth instead of regular broth gives you a nutritional boost—extra protein, collagen for joint and gut health, and deeper flavor. But if all you have is regular beef broth, it’ll still turn out delicious!
It’s also a great meal prep keto recipe—make a batch on Sunday and enjoy it for lunch or dinner all week long. Just reheat and serve!
