Instructions
Line a microwave-safe plate with parchment paper.
Spread 1/3 cup shredded mozzarella into a circle about 6 inches in diameter.
Microwave for 1 minute 15 seconds, or until bubbly and golden on the edges.
Quickly remove the parchment with the cheese circle and drape it over a rounded spoon handle to form a taco shape. Let cool and harden, about 2 minutes.
Repeat with remaining cheese.
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.
Stir in low-carb taco seasoning and cook for another 1–2 minutes. Set aside.
Fill each cooled cheese shell with a scoop of the seasoned meat mixture.
Top with shredded cheese and keto-friendly toppings of your choice.
