Ingredients

For the Cheese Shells:
- 1 1/3 cups shredded mozzarella cheese (about 1/3 cup per shell)
For the Filling:
- 1 pound ground beef
- 1 tablespoon low-carb taco seasoning (store-bought or homemade)
- Salt to taste (if needed)
Optional Keto Toppings:
- Shredded cheddar or Mexican blend cheese
- Shredded lettuce
- Diced onion (small amount for keto)
- Sliced avocado
- Sour cream
- Sugar-free salsa
Instructions



1. Make the Cheese Taco Shells
- Line a microwave-safe plate with parchment paper.
- Spread 1/3 cup shredded mozzarella into a circle about 6 inches in diameter.
- Microwave for 1 minute 15 seconds, or until bubbly and golden on the edges.
- Quickly remove the parchment with the cheese circle and drape it over a rounded spoon handle to form a taco shape. Let cool and harden, about 2 minutes.
- Repeat with remaining cheese.
Tip: Only use mozzarella for the shells—other cheeses may not crisp or hold shape properly.
2. Cook the Meat
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess fat if needed.
- Stir in low-carb taco seasoning and cook for another 1–2 minutes. Set aside.
3. Assemble the Tacos
- Fill each cooled cheese shell with a scoop of the seasoned meat mixture.
- Top with shredded cheese and keto-friendly toppings of your choice.
- Serve immediately while shells remain crisp.
