These Blackstone Fajita Bowls are my twist on classic fajitas, but instead of tortillas and flank steak, ground beef, bell peppers and onions are piled high over rice for a hearty, flavorful, and family-friendly meal.
Btw- don’t have a Blackstone? No worries, this works great on a griddle or pan on the stovetop.

Ground Beef Blackstone Fajita Bowls

Cooking the rice right on the Blackstone gives it a toasty finish and brings that signature griddle flavor into the whole dish.

Main Ingredients
- Ground beef (80/20)
- Bell peppers (red, yellow, green), sliced thin
- Medium onion, sliced thin
- Oil (avocado or olive)
- Pre-cooked rice (white, brown, or cilantro-lime)
- Toppings: shredded cheese, salsa, sour cream, guacamole, jalapeños, cilantro, lime wedges
Homemade Fajita Seasoning

Make this yummy seasoning, or buy fajita seasoning (sometimes we don’t have time and I’m not judging!- either way, it will taste great). Just make sure you get about 3 Tbsp of seasoning.
- Chili powder
- Smoked paprika
- Ground cumin
- Garlic powder
- Onion powder
- Dried oregano
- Salt
- Black pepper
- Cayenne (optional, for heat)
Instructions



Step 1: Preheat & Oil
Heat your Blackstone or griddle to medium-high and drizzle with oil.
Step 2: Cook the Veggies
Add bell peppers and onions to one side of the griddle. Cook until softened and charred, about 5–7 minutes. Sprinkle lightly with fajita seasoning.
Step 3: Brown the Beef
On the other side, cook ground beef, breaking it apart with a spatula until browned and cooked through. Drain grease if needed. Sprinkle with the remaining fajita seasoning and stir well.
Step 4: Toast the Rice
Spread the cooked rice on a clean section of the griddle. Drizzle with oil and stir occasionally until warmed and slightly crispy. For extra flavor, mix in chopped cilantro and a squeeze of lime.
Step 5: Combine & Build
Mix the beef and veggies together on the griddle. Spoon rice into bowls, top with the fajita mixture, and finish with your favorite toppings.
